Today we offer a recipe of tasty pasta dishes and inexpensive: pasta with rabbit sauce. This dish has a mild and very pleasant, and is a great alternative to the classicmeat sauce, even the least like the traditional chicken stew, always cooked with thenoodles. The preparation is quite simple: the rabbit should be boiled and chopped,and then be flavored with garlic, rosemary, juniper berries, sage, bay leaves,tomatoes and of course, to create the sauce. After cooking the sauce for 40 minutesat least dress the noodles until al dente drain and sprinkle with grated Parmesan cheese to taste.
Ingredients for noodles in rabbit sauce (serves 4):
* 400 g egg noodles
* 2 legs of rabbit
* 1 / 2 cup red wine
* 200 g chopped tomatoes
* 2 cloves of garlic
* 2 sprigs of rosemary
* 2 sage leaves
* 1 bay leaf
* 2 juniper berries
* 4 tablespoons olive oil
* A knob of butter
* Sale
* Pepe
* Grated Parmesan q.b.
Preparation:
Cook the rabbit thighs, then disossatele and make them into small pieces. Then sautethe pieces in a pan with four tablespoons of oil and a nice knob of butter together withcrushed juniper berries, chopped garlic, sage and rosemary.
Add salt and pepper mixture, add red wine. Let evaporate for a few minutes over high heat, then add the chopped tomatoes. Cover and cook over low heat for about 40 minutes.
Meanwhile, boil the pasta and add to the cooked mixture ready, divide into dishes andsprinkle with a dusting of grated Parmesan cheese to taste.
