The salad Christmas deserves this name because it uses products related toChristmas such as nuts and radicchio, and also the colors of Christmas, like Santa'sred and green Christmas tree. Forget the name, is a rich and tasty salad to serve as aside dish but also as a vegetarian entrée, or as part of the light and always vegetarianbuffet New Year.
Ingredients for Salad Christmas (serves 6)
* A handful of shelled hazelnuts
* 2 heads of radicchio (Treviso or Chioggia)
* 2 handfuls of rocket
* 12 dates
* 100 g. quartirolo of feta or fresh (optional)
* 2 tablespoons red wine vinegar
* 2 tablespoons balsamic vinegar
* 5 tablespoons extra virgin olive oil
* salt q.b.
Preparation
Go nuts in the oven at 180 degrees until they are well toasted and dark skins begin to crack. Let them cool a bit, then fasciatele with a dish cloth and rub to remove the peelin dark matter. Trituratele coarsely.
Wash and dry the salad, then cut the radicchio into small pieces 2 to 3 cm. Dates toremove the core, and cut into four pieces lengthwise.
Combine the salad, dates and nuts into a salad mix. Beat the two types of vinegar, oileu bit 'of salt in a bowl and pour the salad deed. If you use it and give it crumbled fetaover the salad.
